The Loir River cut it's bed in tufa limestone, which is a geological sub soil; the tufa when mixed with sand, allow the Chenin to express finesse, elegance and aromatic richness. L'Effraie or the Owl, is assembled from 6 parcels spread through 3 communes. Each parcel has various types of clay and the flint varies in size, from pebbles to sand. The vines are les than 50 years old. Fermented naturally in barrel. All terroirs are fermented separately then blended before bottling.
