Antoine Foucault established Domaine du Collier in 1999. Today he farms nearly 7 hectares of vines, produce a mere 1,250 cases of wine, and is one the top growers in Saumur. His father and uncle owns the famous Clos Rougeard in Saumur-Champigny. Sourced from old vine Chenin Blanc planted on the hillsides of Brézé, the wine undergoes fermentation with natural yeasts in barrel ans24-36 month extended ageing without racking in a very cold undergroud cellar in a combination of young barrels and some Stonginger brand foudres. Complex and with elegance and focus.
